I have made some many chocolate chip cookies using numerous recipe each slightly different. I was a huge fan of Alton Browns recipe from his Good Eats book. But all in all when you just want an easy go to recipe I still go to the chocolate chip bag, and I'm never let down.</div>

Last week was also a very tragic week for my family. We had to say goodbye to my wonderful grandmother, my Nanny. She was such an amazing woman and we are still in shock that she is no longer with us. Through her I learned to love animals and will always have a special place for elephants. As the old saying goes, " An apple a day keeps the doctor away", I literally eat an apple almost everyday. They are just something I never get tired of and really enjoy. And apple desserts, well that's just on a different level. Apple pie, apple cake, apple muffins, apple cider donuts. mmmmm! </div>

Well my roommate made homemade apple strudels. Last spring her and I traveled to Europe with our first stop in Switzerland. All I talked about was wanting to get an apple strudel while there. Apparently Switzerland is known for their strudels, after their fondue of course. That being said you would assume they would have endless amounts and places to eat and purchase their famous apple strudels. WRONG. </div>

Directions:</h3>
<ol>

Heat the oven to 375°F and line a baking dish with parchment paper to ensure pastries will not stick.</div>

Beat the egg and water in a small bowl with a fork. </div>
</li>

Stir the granulated sugar, flour, cinnamon and nutmeg in a medium bowl. Add the apples and toss thoroughly to coat.</div>

Heat a medium pan with the 2 tablespoons of butter and add the apple mixture. Saute on high until mixture begins to bubble then reduce the heat and simmer for an additional 5-10 minutes, until apples have softened, but are not mushy. </div>

Sprinkle flour on the work surface and unfold the pastry sheet on the work surface. </div>
</li>
<li><div class="instructions">
Cut Pastry into 6 rectangles ( 1 large cut down the middle and 2 cuts going across). Then Place each piece onto the baking dish with at least 1inch to separate.</div>

<li><div class="instructions">
Divide the apple mixture amongst the pastries, placing in the center of each and leaving room to seal the top pastry. </div>
</li>
<li><div class="instructions">
Repeat the cutting of 6 rectangles with another piece of the puff pastry dough.</div>
</li>
<li><div class="instructions">
Place each piece on top of the pieces already filled with the apple mixture and gently press the the pastry around the apple mixture.</div>
</li>
<li><div class="instructions">
Press the edges of the bottom pastry into the top pastry and ensure they are sealed. </div>
</li>
<li><div class="instructions">
*You can use a fork to seal the edges or cut larger rectangles and roll your strudel.*</div>
</li>
<li><div class="instructions">
Brush the pastry with the egg mixture. Cut several slits in the top of the pastry.</div>
</li>
<li><div class="instructions">
Bake for 35 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 20 minutes. </div>

Who doesn't love buffalo chicken anything?! I love making buffalo chicken dip yet I rarely do because its just too dangerous to have in my house. I WILL eat the whole thing. I have yet to learn self control so its been a while since I have made that delicious dip, but I still wanted something buffalo. Something nice and spicy. I thought about buffalo chicken chili but I really love making pizza so I decided to create my own version of buffalo chicken pizza. </div>

I used a blue cheese sauce for the base then layered it with ground chicken tossed in buffalo sauce, thin slices of red onion, mozzarella, and lots of crumbled blue cheese. MMM MMM MMM!</div>

<li>1/4 cup sour cream</li>
<li>1 tablespoon milk</li>
<li>2 tablespoons white wine vinegar</li>
<li>1/4 teaspoon Worcestershire Sauce</li>

<li>1/2 teaspoon kosher salt</li>
<li>1/4 teaspoon freshly ground black pepper</li>
<li>1/8 teaspoon garlic powder</li>
<li>1/2 cup (2 oz.) crumbled blue cheese</li>

<strong>Directions</strong><br />
<ol>
<li> Combine mayonnaise, sour cream and milk in small bowl and mix until smooth. </li>
<li>Stir in vinegar, Worcestershire sauce, sugar, salt, pepper and garlic powder until well blended.</li>
<li>Fold in cheese.</li>
<li>Transfer to container with tight-fitting lid. Chill until serving time. </li>
<li>Stir well before serving.</li>

<strong>For the Pizza</strong><br />
<strong></strong><br />
Homemade or store bought whole wheat pizza dough.<br />
1 tbs olive oil<br />
1/2 tablespoon garlic powder<br />
salt and pepper to taste <br />
1 lb ground chicken<br />
3/4 cup Frank's Red Hot Buffalo sauce<br />
1/2 cup Blue Cheese dressing<br />
3/4 cup shredded mozzarella<br />
1/2 cup crumbled blue cheese<br />
1/2 a medium red onion, thinly sliced<br />

<li>Preheat grill with medium high heat. You want the grill pretty hot so the oiled dough wont stick. (<strong>IF COOKING IN OVEN</strong>: <em>Preheat to 425 degrees</em>)</li>
<li>In a medium or large skillet, heat olive oil over medium heat for just a minute before adding ground chicken.
</li>
<li>Cook over medium heat for 5-8 minutes until chicken is cooked thoroughly.</li>
<li>Sprinkle with salt and pepper, and garlic powder. </li>
<li>Pour hot sauce over chicken and stir to coat evenly. Remove from heat. **Steps 2-5 can be done ahead of time**</li>
<li>On a flour surface knead the pizza dough for a minute and then flatten with hands. </li>
<li>Roll or toss (if you are that skilled) dough out to about 1/4 to 1/2 inch in thickness. Oil the face up side of the dough and transfer to the preheated grill with the oiled side down. (<strong>IF COOKING IN OVEN</strong>: <em>lightly oil a cookie sheet, or use a preheated pizza stone, and press dough into the pan following with the toppings and cook 18-20 minutes</em>)</li>
<li>Close the grill lid and let dough cook for 3-5 minutes, then oil the top of the dough again and carefully flip the dough.</li>
<li>Spread a thin layer of the blue cheese dressing over the crust and top with chicken and red onion.Sprinkle mozzarella to top the pizza. Finish with as much crumbled blue cheese you as you prefer. </li>
<li>Close the lid and continue cooking for another 5-10 minutes until dough is cooked and slightly crisp and cheese is melted..</li>
<li>Serve with extra blue cheese dressing and dig in!</li>

Well I have to say I must be the worst blogger around! I have been barely posting for months now,<br />
:(. I really don't blame myself though. I blame technology and the death of my lap top. I have been busy yes, but not too busy to blog. It is just hard to get to a computer all the time.</div>

<strong>*note* </strong>This can burn easy so be careful and keep an eye on the sugar. It may be tricky but SO worth it.<br />

<li>In a medium non stick sauce pan over medium high heat, combine the sugar and lemon juice. Stir with a wooden spoon until the sugar is mostly melted then set aside the spoon and swirl the pan over the heat to keep the color even throughout. </li>
<li>Continue to cook and swirl until it sugar turns a medium amber color. Be cautious because the sugar can darken quickly and you do not want that. It will taste burnt. </li>
<li>When the sauce is at the dark amber color slowly whisk in the cream. If the caramel hardens with the addition of the cream, just continue to add the cream and bring the mixture back to a a boil over medium heat. </li>
<li>Continue to stir until the sugar has remelted. </li>
<li>Allow to boil for 5 minutes then remove from heat and stir in the butter. </li>
<li>Stir in sea salt and pour into a heat safe container and chill until ready to use. </li>

<li>3 8-ounce packages of cream cheese, room temperature</li>
<li>1 1/4 cups granulated sugar</li>

<li>8 ounces good quality white chocolate, chopped</li>
<li>5 large eggs</li>
<li>1 teaspoon vanilla extract </li>
<li>pinch salt</li>

<li>Pre-heat the oven to 375°F. </li>
<li>Combine the graham cracker crumbs with the melted butter and press into the bottom and 1 1/2 inches up the side of a 10 inch spring form pan.</li>

<li>Bake for 10 minutes and then allow to cool completely on a wire rack. </li>
<li></li>
<li>Reduce the heat to 325°F and prepare the cheesecake batter. </li>
<li></li>
<li>Place the chopped white chocolate into a heat safe bowl and set aside. Then bring the heavy cream to a simmer over medium heat in a small sauce pan. </li>
<li>Pour the hot cream over the white chocolate. Stir the chocolate gently until melted completely. </li>
<li></li>
<li>Place the cream cheese in your mixer with the paddle attachment and beat the cream cheese until smooth and lump free. </li>
<li>Add the sugar and mix, scraping down the sides of the bowl several times. </li>
<li></li>
<li>On medium speed, slowly add the melted white chocolate and mix until just combined</li>
<li>Follow with the eggs, one at a time, beating on low speed until each egg is incorporated. Then the mix in the vanilla and salt and pour into your prepared pan. </li>

<li>Place the pan onto a couple large sheets of aluminum foil and smooth them up the sides of the pan to waterproof. </li>
<li></li>
<li>Set the cheesecake into a large roasting pan and then place in the oven. Pour the boiling water into the roasting pan, filling to about one inch (no higher than the lowest edge of aluminum foil). </li>
<li>Bake at 325°F for one hour then reduce heat and bake at 300°F for an additional 60-90 minutes until the center is just set. (Mine took just over 60 minutes)</li>
<li></li>
<li>Remove from the oven and allow to cool completely on a wire rack. </li>
<li>Once cool chill for at least 4 hours before serving. </li>
<li>Before serving pour a small amount of the caramel sauce over the top of the cheesecake until the top is covered with a thin layer. If needed reheat the sauce slightly in the microwave for a few seconds to allow easy pouring and spreading. </li>

Well this one is another delicious way to use up these summer berries. This recipe is a Food Network Magazine find. My roommate and I actually both bought the magazine and both saved this recipe so we knew we had to make it. </div>

This is the perfect summer pie and will be great at any bbq or gathering. Not only is this a impressive pie to look at but it is made from scratch (even the crust!), which makes it all the more impressive. Being that it is made from scratch, it is a little bit time consuming but well worth it! </div>

It is a whole wheat crust which is dense and buttery, much better than a store bought pastry or pie crust. It also has an amazing brown sugar and walnut crumble topping, mmm mmm mmm! <br />

I was intrigued by the use of honey instead of sugar because honey has a much deeper flavor and less intense sweetness than pure sugar. I did change a few things though. </div>

Separate the eggs. Placing the yolks into a large bowl. Save the whites for up to 1 day, make an omelet for breakfast with them :).</div>

Beat egg yolks well and set aside. </div>
</li>
<li>Put the heavy cream and milk in a medium-sized, heavy-bottomed pot.</li>
<li>Set the pot on the stove over medium heat, stirring occasionally, until it just starts to steam and bubble at the edges. Don’t let it boil.</li>
<li>While waiting for the milk to heat up, pour the honey into a large bowl and set aside.</li>
<li>Fill a bigger bowl with ice and set aside. This is going to be your ice bath to cool the heated mixture so you want the smaller bowl to fit inside the bowl with the ice. </li>
<li>Place your strainer on top the bowl with the honey.</li>
<li><div style="text-align: left;">
Once milk mixture is heated remove from heat. Using a ladle, SLOWLY drizzle the milk mixture into the beaten egg yolks, while whisking continuously. You want to temper the eggs, bring the temperature up with out cooking them and getting scrambled eggs. So doing this slowly and whisking at the same time is important. </div>

Continue to do this until the majority of the milk mixture is whisked into the yolks. The pour yolk and milk mixture back into the pot and place back on the stove. </div>
</li>
<li><div style="text-align: left;">
Attach your candy thermometer to the pot but do not let it touch the bottom or you will not get an accurate reading. </div>
</li>
<li><div style="text-align: left;">
Heat over medium heat until mixture reaches 170, stirring occasionally. </div>
</li>
<li><div style="text-align: left;">
Once it reaches 170, instantly remove from heat and pour through the strainer into the bowl with honey. This will catch any cooked pieces of egg. </div>
</li>
<li><div style="text-align: left;">
Whisk to incorporate honey and follow with the vanilla.</div>
</li>
<li><div style="text-align: left;">
Pour into a container, press plastic wrap onto the top of the mixture, and let chill in the fridge for 4-6 hours, yes you need some patience. </div>
</li>
<li><div style="text-align: left;">
Once fully chilled and thickened, churn in ice cream machine according to that machines directions. </div>
</li>
<li><div style="text-align: left;">
Enjoy right away for a soft serve texture, then place in a freezer safe container and let set over night.</div>

I was honestly surprised how great they tasted. Now, that's not because I don't trust her baking and cooking. It was mainly because they were not as dark as your typical brownie. They had a lighter brown color to them, so I was expecting a light chocolate flavor and a cake like texture.</div>

Well don't judge a book by its cover and don't judge a brownie by its color. These were dense and fudge like with out being too heavy. And they chocolate flavor was stronger than it looked which was balanced nice by adding a little extra vanilla. Again MMM MMM MMM!</div>

So the next morning I asked her what recipe she used. She basically looked up brownies online and took the first recipe she thought was easy enough. Literally only needs, butter, sugar, cocoa powder, eggs, vanilla and flour. You can go ahead and chocolate chips or walnuts or whatever you like in your brownies, but these cannot be easier. No melting chocolate or anything just mixing and baking. </div>

They are light and airy vanilla cupcakes filled with a blueberry sauce that is made with honey instead of sugar, and topped with a cream cheese frosting. A great summer cupcake, especially here in South Jersey where blueberries are as fresh as you can get! </div>

I filled the cupcakes by using a small pairing knife to cut a circle into the top of the cupcake. Then I pulled the piece out and gently pressed down on the hole to make a little but more room for the filling. Next I spooned the cooled blueberry filling into the hole and topped with the piece I removed. I had some left over yellow squash and could not think of what to do with it. I tend to saute it and add it into pasta, rice, or couscous. But I wanted to think outside the box. </div>

So I went to straight to the <em>all knowing</em> and did my research. I googled it. I typed in yellow squash recipes and found a few recipes that used them to make pancakes, latkes, fritters, patties, whatever you want to call them. I think they sound more appetizing when they are called fritters. Wouldn't you be more intrigued by a fritter as opposed to a patty? I think so.</div>

If it is too dry add another egg. Form patties and pan fry on medium until

<strong>Vanilla Walnut Granola</strong><br />
<strong>Ingredients</strong><br />

<li>4 cups oats</li>
<li>1 1/2 cups chopped walnuts</li>
<li>1 c. brown sugar</li>
<li>1 tsp. salt</li>
<li>2 tsp cinnamon </li>
<li>3/4 c. canola oil</li>
<li>1 c. honey</li>
<li>3 Tbsp. vanilla</li>
</ul>
<strong>Directions</strong><br />
<ol>
<li>Preheat oven to 300-degrees.</li>
<li>Combine oats, walnuts, brown sugar, salt, and cinnamon in a large bowl. </li>
<li>In a saucepan combine oil, honey, and vanilla and bring to a boil.</li>
<li>Continue to boil for one minute then pour over oat mixture. </li>
<li>Mix well, until all ingredients are moistened.</li>
<li>Spread mixture on a large cookie sheet (you may need two sheets). </li>
<li>Bake for 20-30 minutes, stirring several times, flipping the granola.</li>
<li>Remove from oven and cool for several minutes until the granola hardens slightly.</li>
<li>Break up granola and store in large Ziploc bags or containers. </li>
<li>Serve plain, with yogurt, or with milk. </li>

And for those of you who aren't too thrilled about anything lemon I recommend trying this cake. It's not a super strong lemon flavor. <br />

1 1/2 cup flour</div>
</li>
<li>1 tsp baking powder</li>
<li>1 tsp salt</li>
<li>1/2 cup honey</li>
<li>1/2 cup granulated sugar</li>
<li>1/2 cup unsalted butter, room temperature</li>
<li>2 eggs</li>
<li>1/2 cup milk</li>
<li>Zest of 1 full lemon</li>
</ul>
<strong>For the Glaze</strong><br />
<ul>
<li>Juice of 1 full lemon </li>
<li>1 tbsp honey </li>
<li>1/4 cup powdered sugar </li>
</ul>
<strong>Directions</strong><br />

<li>Preheat the oven to 350 degrees.</li>
<li>Spray a 9in loaf pan and line it with parchment paper, letting it hang over the edges. This will make it easier to remove from the pan. </li>
<li>In a small bowl combine the flour, baking powder and salt. </li>
<li>In a large bowl with an electric mixer beat together the honey, sugar, butter and eggs. </li>
<li>Add the milk and lemon zest then mix further. </li>
<li>Add the flour mixture and blend it until it's just combined. </li>
<li>Pour it into the prepared loaf pan and smooth the top with a spatula. </li>
<li>Bake it for 30 – 40 minutes or until a toothpick inserted into the middle comes out clean and the top is a golden brown. It will bake much quicker on the top and edges and look finished but check the middle with a toothpick to be sure. </li>
</ol>

<strong>To Make the Glaze</strong><br />
<ol>
<li>In a small bowl whisk together the reserved lemon juice, honey and powdered sugar. </li>
<li>With a spoon drizzle the glaze over top of the warm cake and let it soak in for 10 – 15 minutes.</li>
</ol>

Using the parchment paper overhang lift the cake out of the pan and let it cool completely on a cooling rack before slicing it. This recipe is one I came up with yesterday morning. I had bought some blueberries and they were extremely plain and almost flavorless. This was a pinterest recipe I literally made the morning I found it. It is super easy and quite healthy. I thought it was a great change than the normal morning egg, with layers of delicious flavor.</div>

I stepped back and regained my self control and saved it for lunch with a side salad. To reheat it, I just popped it right back in the oven to warm it up. <li>Handful of grape tomatoes sliced</li>

<li>2 eggs (I used one because my ramekins are quite small)</li>
<li>1 tsp milk </li>
<li>1 tsp feta cheese ( I used tomato basil feta to amp up the flavor!)</li>
<li>Salt and pepper, to taste</li>

<li>Preheat the oven to 350 degrees and spray a small ramekin with cooking spray.</li>
<li>Toss the sliced tomatoes with the olive oil, basil, crushed red pepper, garlic, salt, and pepper.</li>
<li>Pour into each ramekin then place the dishes on a baking sheet and bake for 15 minutes.</li>
<li>Remove from the oven then crack the eggs into the dish, then add the milk, feta cheese, and season with salt and pepper.</li>
<li>Return to the oven and cook for 13-15 minutes or until the whites set but the yolks are still soft. Remove from the oven and serve with some whole grain toast.</li>

Haha, most likely not. But for the time being I am pretty much crazy about this cupcake. I had a request for a mango cupcake. They didn't care what else as long as there was mango in it. I got to pondering and it took me a few days and some research but I came up with this recipe the day these cupcakes were needed. <br />

I didn't want to do just a white or vanilla cake with a mango frosting, I wanted something more complex. I also knew I didn't want the cupcake itself to be mango. So I did some research on mango cupcake recipes and found quite a bit of coconut and mango in many varieties and was instantly sold. Mango and coconut, the perfect tropical combination. </div>

I decided on a coconut base with a mango curd fillings and fresh mango frosting. That way the coconut was not over powering the mango flavor, instead just blended sweetly. </div>

I kept debating on how to make the cupcake. Do I use shredded coconut? Coconut milk? Both? Well I went with the shredded coconut, which was folded into the batter at the end. The cake it self had a great flavor however I am not a huge fan of all the shredded coconut and want to experiment using coconut milk to see what kind of flavor and texture I get with that. Regardless these came out phenomenal!</div>

I highly recommend making these. Not only are they crazy delicious, but everyone will be so impressed by your cupcaking skills! Just a warning, these do take some time. You need to puree the mango for both the filling and frosting. The filling also needs to be cooked and chilled for at least 2 hours, so be prepared for some extra steps. </div>

<li>Continure to cook over medium heat until the mixture thickens (6-7 minutes), stirring constantly.</li>
<li>Remove from heat and whisk in the butter one tablespoon at a time.</li>
<li>Pour the mixture into a bowl and top with plastic wrap, pressing the plastic wrap into the top of the filling.</li>
<li>Chill in the fridge for 2 hours. </li>

Prehead the oven to 325 degrees and line muffin tin with cupcake liners. </div>

In a large bowl cream together the butter and sugar until light and fluffy, about 5 minutes.</div>

<li><div style="font-family: inherit; font-weight: normal;">
<span class="Apple-style-span" style="font-family: inherit; font-size: small;">Add the eggs, one at a time, scrapping down the sides of the bowl as you go.</span></div>

Anyways, I have been eating out very often lately and needed a break and really wanted to recreate this meal I had recently that I thought was amazing! It was a nice change to the normal menu options, light, fresh, and simple but full of flavor.<br />

It was a panko crusted chicken breast over an arugula salad with roasted red peppers. It had a tangy citrus dressing which tied all the ingredients together just perfect. Of course it was a pretty good size portion and I had to stop myself from eating the whole thing, although I easily could have. But I saved a little and enjoyed it for lunch the next day :).</div>

Since I was so impressed with the dish, I decided to have a go at trying this and made it at home last night. I used chicken tenders instead of chicken breasts. I also added some spice to the chicken and baked them in the oven, rather than frying. </div>

This was the "hardest" part. The salad can easily be tossed together once the chicken is done cooling. I say this because I prefer to top the salad with room temperature chicken instead of hot/warm chicken which will wilt the salad. </div>

<li>Combine milk and Tabasco sauce in large bowl, and add the chicken. Let sit for at least 15 minutes, allowing the chicken to marinate and tenderize.</li>
<li>Combine breadcrumbs and seasonings in another large bowl, or large shallow dish.</li>
<li>Coat chicken on both sides with breadcrumb mixture and place on a lightly greased baking sheet.</li>
<li>Top with extra breadcrumbs, and bake 30-40 minutes, until the chicken is firm, lightly browned, and has an internal temp of 165 degrees.</li>
<li>Set aside while making salad. </li>

Everyone getting ready for this weekend's extravaganza to celebrate the good ol' St.Patrick?! Well if not grab a big old cup of coffee, top it with some Bailey's and whip up a batch of these little nibblets of goodness. Yes I said nibblets. <br />
Irish Potatoes are a almost like a coconut truffle and despite their <br />
name they were not created in Ireland and they do not contain any potato. They are super sweet but not too sweet thanks to the cinnamon they are rolled in.<br />

If you aren't a fan of coconut they defiantly have an acquired taste. However if you enjoy a good coconut treat then these are great. <br />
<br />
I always try to doctor a recipe to make it my own or experiment to change the flavor in almost every recipe I try. I did just that with these. I had been following my Mom's recipe for years, which is exactly the same as every other recipe out there. I had a little bit of white chocolate left and decided to melt that into the mixture. I also added a dash of nutmeg to the cinnamon coating.<br />

Well, I must say I am quite amazed at how wonderful they tasted with these additions. I was never a huge fan of these and could only just one, if that. Yet I found myself eating one after the other. The white chocolate, cream cheese, and coconut just blend beautifully together. <br />

<li>1/2 package cream cheese (4 oz)</li>

<li>4 cups powdered sugar</li>
<li>2 1/2 cups flaked coconut</li>
<li>1 small bowl filled with brown cinnamon</li>
<li>1/4 teaspoon nutmeg</li>
</ul>
<strong>Directions</strong><br />

<li>In large mixing bowl beat together cream cheese and butter until combined.</li>
<li>Add melted white chocolate, mix until combined. Followed by the vanilla. </li>
<li>Using a sifter gradually add the powdered sugar.</li>
<li>Add the coconut and set in fridge for 10-15. This will make it easy to roll into balls.</li>
<li>Remove from the fridge and form small balls at the size of your liking and roll in the cinnamon and nutmeg mixture.</li>

Well hello strangers! I am super excited to be back in blogging action. Lots has been going on since my last post. New job, new hours, new tiredness. Regardless I am back with lots to share. Some great dinners and cupcakes coming up. </div>

First I will share with you this SUPER easy dessert. I used boxed pudding which saved lots of time and steps. However if you are feeling a step above Betty Crocker than go ahead and try this<a href="http://www.joyofbaking.com/ChocolatePudding.html" target="_blank"> pudding recipe</a>.</div>
<div align="center">
You can also use a pre-made crust but they are extremely easy to make. All it takes is some cookie crumbs and melted butter and there ya go. </div>
<div align="center">
You can also make this slightly healthier by using the reduced sugar and calorie pudding packets with skim milk but be prepared for lack of flavor. I used a regular pudding mix with low fat chocolate milk. Really amps up the chocolate flavor while cutting the fat down a little.</div>

The making of the pie took a little less than 15 minutes. If you don't have a food processor to crush the cookies it might take a tad longer. But beating a bag of cookies is very therapeutic.</div>

It does have to set in the fridge for a few hours so go ahead and make this earlier in the day or the day before you want to enjoy it.</div>

1/4 cup melted butter</div>

In a medium saucepan stir together pudding packet and milk. </div>

Bring to a boil over medium heat, while stirring constantly.</div>

Remove from heat and let cool.</div>

While pudding is cooling, crush Oreo cookies in a large zip top bag or in a food processor, until you have a fine crumb.</div>

Empty crumbs into a bowl and pour in melted butter.</div>

Mix until butter is absorbed and pour into pie dish, pressing down to form crust.</div>

Hi friends! How has every one's February been. Crazy that it's almost over isn't it? Don't forget we get that extra day at the end of the month this year. What to do with the extra time?! Make this gelato that's what.<br />

Many people are confused on the difference between gelato and ice cream or think its the same. It's not the same, but its not rocket science either when distinguishing the two. Gelato simply comes with a hansom Italian man and ice cream comes with out one. Haha, if only. <br />
<br />
Anyways, there is a technical distinction between them. Gelato is made with higher milk to cream ratio where ice cream has a higher cream to milk to ratio. Gelato is therefore lower in fat. This doe not mean a healthy version as it is still loaded with sugar and only slightly lower fat content than ice cream.<br />

True gelato is also churned slower than ice cream, leaving it more dense because not as much air is whipped into the mixture.<br />

Also, I found this quite interesting, the lower fat content in gelato make it so that the gelato does not coat the tongue in the same way. Between this and being served a slighter higher temperature then ice cream, you get a more intense flavor.<br />

You actually do not need an ice cream machine for this and I recommend not using one unless you have a super fancy one where you can adjust the turning speed and time. I simply put it in an air tight container and let it freeze over night. <br />

Although it was not made in true gelato fashion it was still smooth and rich, and just ridiculously amazing. It took me back to being in Italy where I literally ate gelato several times a day.....ah those glorious Italian days.<br />

<li>Remove from the heat and add the cocoa and chocolate, whisking until the chocolate is melted and the mixture is smooth. </li>
<li>In a bowl beat the egg yolks, remaining sugar and salt until thick and pale.</li>
<li>Add the hot chocolate mixture in a slow stream, whisking as you go. </li>
<li>Pour into saucepan and cook this mixture over moderately low heat until it thickens making sure to stir constantly. </li>
<li>Pour mixture through a sieve into a bowl.</li>
<li>Set this mixture over water and ice and chill until cold. </li>
<li>Place into an airtight container and freeze overnight. Or, you can churn this in an ice-cream maker. </li>

Since we are talking about love. There are a few things in life I REALLY love. Such as breakfast. I love breakfast. Enough to eat it for dinner. Remember being a kid and having pancakes and eggs for dinner? It always seemed liked such a treat for some reason. I'm not sure we all would have felt as excited for spaghetti and meatballs for breakfast though. Who knows why breakfast for dinner is so fantastic, lets just accept that it is. </div>

The reason I say this is because I made these phenomenal, yes phenomenal, waffles for dinner last night. I really wanted something different and since its been way too long since my last waffle I decided to have breakfast for dinner. <br />

I also wanted it to be semi-gourmet. I'm not sure you can call a waffle gourmet, but in my kitchen I can :). So i thought browning the butter and adding some cinnamon and nutmeg would be a great idea. I was right, of course.<br />

These are great topped with some extra cinnamon and a sprinkle of brown sugar or the classic butter and syrup. However as I mentioned I wanted something gourmet. After all I was making this for my Valentines Day post. </div>

So gourmet is what I did. Skip the syrup and butter and make a butter pecan sauce. All you need is some pecans, butter, and brown sugar. I added a tad of vanilla and cinnamon. <br />

<strong>Butter Pecan Sauce</strong></div>
1/2 cup pecans, roughly chopped<br />
6 tablespoons butter<br />
1/2 cup packed dark brown sugar<br />
1/2 teaspoon vanilla<br />
1/2 teaspoon cinnamon<br />

<strong>Directions</strong><br />
<ol>
<li>In a small saucepan, melt the butter over medium-high heat. </li>
<li>Continue cooking until the butter turns brown and has a nutty fragrance, about 5 minutes then remove from heat.</li>
<li>In a medium bowl, whisk together the flour, brown sugar, baking powder, baking soda and salt. </li>
<li>Make a well in the center and pour in the buttermilk and the egg yolks and together, gently working them into the dry ingredients until just combined. </li>
<li>Add the browned butter and whisk until fully absorbed.</li>
<li>In a separate bowl, beat the egg whites with an electric mixer until soft peaks form. </li>
<li>Gently fold the whites into the batter in two additions. </li>
<li>Spray the the waffle iron with nonstick spray and cook the waffles according to the manufacturer's instructions. </li>

<strong>For Butter Pecan Sauce</strong><br />

In a medium saucepan toast the chopped pecans for several minutes until fragrant, about 2-3 minutes.</div>

Add the butter and melt.</div>

Add the brown sugar, vanilla, and cinnamon, stirring until sugar is dissolved.</div>

Since we had to entertain ourselves with out tv and internet, I took the liberty of making my roommate my apprentice in the cupcake world. I figured I'd be doing a lot of baking here and could use the help. She was actually very excited and a great student! We made chocolate cupcakes with cream cheese frosting and she picked up the pipping really fast so they also looked great. We have lots left over so I am going to teach her how to make cake pops. Maybe I'll be neighborly and bring them to the family next store, with my business card of course ;).</div>

Being in disconnect gave me lots of time to get out and enjoy my new location. I am only a few blocks from the beach and that is heaven! I also had some close friends over for dinner last week once everything was settled in. Even though we had to use stools, fold-able chairs, and tray tables because of our tiny tiny kitchen table, it was such a fun night and I am so thankful for such wonderful friends. <strong>Sweet Potato and Black Bean Enchilada</strong> </div>

<strong>Ingredients</strong> </div>
<ul>
<li><div align="left">
2 cups cooked mashed sweet potatoes- I cook in microwave for 10-12 minutes then peal and mash with fork.</div>
</li>
<li>1 cup canned black beans, drained and rinsed</li>
<li>2 cups crumbled queso fresco cheese, divided. (Can't find queso fresco? I used reduced fat feta cheese)</li>
<li>1/2 cup pepper jack (optional- I sprinkled some on top before baking)</li>
<li>1 teaspoon ground chili powder</li>
<li>1/4 teaspoon ground cinnamon</li>
<li>1/4 teaspoon salt</li>
<li>2 cups jarred fire roasted tomato-enchilada sauce</li>
<li>2 tablespoons adobo sauce from canned chipotle chiles</li>
<li>10 corn tortillas</li>
<li>1/2 cup canned creamed corn</li>
<li>1/3 cup reduced fat sour cream </li>
<li>1 tablespoon coarsely chopped cilantro</li>
<li>Avocado slices, for garnish</li>

<strong>Directions</strong></div>
<ol>
<li>Preheat oven to 400 degrees F. </li>
<li>In a large bowl, stir together sweet potato, black beans, 1 cup cheese, chili powder, cinnamon, and salt until well combined. </li>
<li>In a separate bowl, whisk together enchilada sauce and adobo sauce and pour half of the sauce into a 13x9-inch baking dish. </li>

Warm tortillas in the microwave, covered in damp paper towels, for 1 minute.</div>
</li>
<li><div align="left">
Place a heaping spoonful or about 1/4 cup sweet potato mixture on one side of a tortilla, roll up, and place in baking dish. </div>
</li>

Continue with the rest of the mixture and tortillas.</div>
</li>
<li>Drizzle remaining enchilada sauce on top of tortillas, and sprinkle with the remaining cheese.</li>
<li><div align="left">
Bake 20-25 minutes or until golden brown and bubbly. </div>
</li>
<li><div align="left">
Meanwhile, make the sweet corn cream sauce by pureeing the creamed corn and sour cream until well combined ( with a food processor or blender). </div>

Stir in cilantro (optional- many people do not enjoy cilantro). </div>
</li>
<li><div align="left">
Serve enchiladas with a drizzle of sweet corn cream sauce, and top with avocado slices (optional as well).</div>
